Limoncello Mojito

Limoncello Mojito

Ingredients

  • 1 oz Limoncello

  • 1 oz white rum

  • 1 oz freshly squeezed lime juice

  • 1/2 oz simple syrup

  • 5 mint leaves

  • Soda water

Method

To prepare the simple syrup, combine 1/2 cup granulated sugar with 1/2 cup water in a saucepan over high heat. Bring to a boil. Remove from heat and stir until sugar has dissolved. Let cool completely before preparing the cocktail. Refrigerate in an airtight container.

To prepare the cocktail, muddle three mint leaves, lime juice, and simple syrup together in the bottom of a cocktail shaker. Fill with ice. Add the limoncello and white rum. Shake for 30 seconds or until well chilled. Strain into a highball glass with ice. Fill the remaining space in the glass with soda water. Garnish with remaining mint leaves. Serve immediately.
