Spiced Apricot-Peach Soup
Five spice and maple syrup offer added complexity to an otherwise mild chilled summer soup.
This simple soup comes together in a matter of minutes yet is refined enough to serve at a dinner party. For an inviting first course that feels elegant and unexpected, try serving the soup in small juice glasses or ramekins. Otherwise, it makes for a light and delicious meal when paired with salad and crusty bread.
Spiced Apricot-Peach Soup
Yields 2 Servings
Ingredients
1/2 teaspoon dried five spice
1 teaspoon maple syrup
2 teaspoons rice vinegar
3 small peaches, peeled and pitted (reserve 1 - 2 slices)
3 apricots, pitted (reserve 1 - 2 slices)
4 - 5 fresh cherries, chopped for garnish
1 - 2 fresh peach slices, chopped for garnish
1 - 2 fresh apricot slices, chopped for garnish
Method
To a blender, add the first five ingredients. Process until smooth.
If a finer consistency is desired, strain through a sieve.
Transfer to the refrigerator and chill for at least 30 minutes until serving. Garnish with chopped cherries, peaches and apricots when ready to serve.
